Day 5: Red-brilliant cookies

Wandering through my kitchen looking at supplies on hand, tapping my fingers on the counter and muttering “what to make, what to make,” and my brilliant love say “Make red velvet cookies.” Brilliant. Yeah, yeah I am obsessed with red velvet (as you will see as the days go on) but this was such a good idea and actually won me first place in my work cookie competition when I recreated it a few days later. These cookies are beautiful, the right amount of crisp on the outside, chewy throughout with a cream cheese surprise in the middle. Make these…now.

Red Velvet Cookies with a Cream Cheese Center

1/2 cup butter

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

1 1/2 cups all purpose flour

1 tsp baking soda

1/4 tsp salt

1/3 cup cocoa powder

1 tsp red food coloring

1/2 cup chocolate chips

Preheat oven to 375
Cookies:
Cream butter and sugars together until fluffy in the bowl of an electric mixer. Add egg and vanilla and combine until smooth. Beat in red food coloring. Stir in cocoa, flour, baking soda and salt until just combined, scraping down the sides when needed. Fold in chocolate chips.

Cream Cheese Mixture:
4 oz cream cheese- softened at room temp

1/2 cup powdered sugar

1 TBS Flour

Mix and cream together.

Assemble:

Scoop about 2-3 Tbs of dough and form a well in the middle. Put in cream cheese mixture, fold in dough and cover hole with a little more and press down to form a disc shape.

Bake 8-10 minutes. Remove from pan and cool on a wire rack.
